It’s not that I’m a huge fan of pad thai or anything but the other day I just decided I would add it to our week’s dinner menu.  Usually that’s how I am.  I think of something that I want and I figure out how to make it in a healthy fashion.  I didn’t google “how to make pad thai” or anything like that.  I just saw this box of brown rice noodles pad thai at the grocery store and thought “voila, this should work!”  I’ll explain what else I did to make my version of healthy pad thai so you can also learn how to make healthy pad thai!

First, I started by following the package instructions for “stir fry noodles.”  Which were so easy.  All I had to do was soak the noodles in hot water for 8-10 minutes (or until tender).  Then, add the drained noodles to my stir fry and cook for an additional 1-2 minutes.

This is the brand of noodles that I used.  Annie Chun’s Pad Thai.  They are naturally gluten free since they are made out of brown rice and actually have some fiber (unlike most rice products).  Sorry for the layout of the picture, I couldn’t get it to rotate!

Healthy Pad Thai

As far as the stir fry, I chopped up some bell peppers, onion, green onion, garlic and cilantro.

First, I heated a little bit of avocado oil in a pan, then tossed in the garlic and onion.  Once that was browned, I threw in the bell peppers.  Lastly, I threw in the green onion and cilantro.

Then, I added a little bit more of avocado oil and 2 eggs in the stir fry and scrambled them.  I reduced the heat to low and squirted some Braggs Aminos (it’s basically kind of like soy sauce but soy free and has aminos) and also threw in the cooked noodles.  I tossed it all together until it was all cooked and ready to go.  You see, easy!

Healthy Pad Thai

Oh yeah, I also boiled some chicken breast in braggs aminos and lemon for my husband and toddler.  So this plate here is my husband’s plate.  He had some pad thai, with boiled chicken breast and a side of steamed broccoli (yes, he got seconds).


I’m not a big chicken fan (although I do eat it on some occasions) so I had pad thai with steamed broccoli.  Yummy!


And my toddler, well he had the same as daddy.  He loved it!
