Okay, I know National Donut (or Doughnut) Day already passed. However, it doesn’t mean you can’t enjoy a donut (a healthy donut that is) any other day.  With my healthy donuts recipe, anyone can enjoy donuts guilt free!  Did I mention they’re gluten free, nut free, dairy free, and egg free.  Whoa, I know!

Healthy Donuts Reci

I decided to whip up these donuts to share with my colleagues and boss during a meeting we had a few weeks ago.  My boss, in particular, enjoys donuts and jokes about them quite often.  It’s pretty funny.  I told him I would bake some of my healthy donuts for him and that he’d be hooked.  He accepted by throwing in a curve ball and sharing his list of allergens with me.  It went something like this:

  • No eggs
  • No nuts
  • No banana
  • I can’t remember what else at this point 🙂

But just with that alone, I thought “oh boy, maybe I should re-consider baking for him.”  Also, the truth is, I do get a bit self conscious about cooking or baking for people who aren’t somewhat health conscious because some people can be a bit mean and/or rude and criticize my healthy tendencies.  But luckily, I went ahead and made them anyways and they were a hit!  The next day my boss asked for the recipe.  And a week later he shared with me how he had decided to start working out again ever since he tried my healthy donuts.  🙂  I doubt the donuts had anything to do with it but I’m sure the concept of simply reinforcing the fact that making healthy choices is possible is encouraging and motivating to some people.  I think that’s what happened with my boss and I’m glad that I was able to influence him in a positive way.

I guess the moral of the story is… you can’t give up!!  You must try again and again and again to make choices that will make you feel the way you want to feel.  For me personally, when I eat good food, I feel good!  When I eat crappy food, I fell, well… crappy.

Healthy Donut Sticks Recipe

Here is a list of the ingredients I used for my healthy donuts recipe (makes about 6 donut swirls or 18 small donut sticks):

For the donuts:

  • 1 cup oat flour (I used gluten free oats and blended into a flour in my vita mix)
  • 2 scoops Blenditup protein powder  (I also really like this protein powder)
  • generous dash of cinnamon
  • 1/4 tsp baking soda
  • 1/4 cup apple sauce (instead of oil)
  • 2 tbsp of ground flax seed soaked for about 10 minutes in 6 tbsp of water (or you could use 2 eggs)
  • 1 small zucchini (shredded)
  • 1/3  cup almond milk
  • 1/2 tsp vanilla extract
  • 2 tbsp honey

For the sprinkles:

  • 2 shredded carrots
  • Coconut sugar

Instructions:

  1. Preheat the oven to 425 degrees F
  2. Mix all donut ingredients together
  3. In order to make the “sprinkles” which are made out of carrots, first, shredd the carrots, then toss them in a bowl with some coconut sugar (you only need a bit of coconut sugar, FYI).
  4. Coat your donut pan lightly with some coconut oil using a napkin and toss the “sprinkles” on the surface of the pan.
  5. Pour the “donut” batter on top
  6. Bake for 15 minutes

These donuts will come out pretty moist!  If you don’t want them to come out as moist, experiment with adding less apple sauce, zucchini, or almond milk.  Or, if you make them and feel that they are a bit too moist, try leaving them in the fridge overnight.
