healthy chocolate truffles

A while ago I shared on social media how I came up with a healthy chocolate truffles recipe.  My family loved them and I actually found that my husband was opting for these instead of the store bought chocolates that someone had given him for Father’s day.  Winning!

You’re going to be surprised by the ingredients but this is how you realize that indulging does not have to cause guilt or make you feel sick afterwards.  Chocolate is not necessarily bad for you, when it’s in it’s purest form, that is.  But, the way chocolate is processed these days, leaves no room for the benefits of the antioxidants to remain.  So, if you’re going to enjoy store bought chocolate, strive to get dark chocolate that has at least 70% cacao or more.  This way you’ll be sure to actually get the benefits from the cacao which has all of the antioxidant goodies that benefits our bodies.

Okay, on to the recipe for these bad boys.

Ingredients for truffles:

  • 1 can of garbanzo beans (rinsed)
  • 2 tbs cacao
  • 1/2 banana
  • cinnamon
  • 2 tbs coconut oil
  • 3 tbs nut butter
  • 1/2 tsp vanilla extract
  • 1 scoop protein powder (I used this one)
  • 5 dates

Ingredients for the chocolate coating:

  • 2 tbs coconut oil
  • 2 squares of dark chocolate
  • 1 tbs maple syrup
  • Coconut sugar (if you’d like it to be a bit sweeter)

Directions:

  • Line a baking pan with parchment paper
  • Blend all truffle ingredients in a blender (pulsing until smooth)
  • Roll up the truffle mix into small balls and place them on the lined parchment paper.  Set in refrigerator while you make the chocolate coating
  • Melt all chocolate coating ingredients in a small sauce pan over medium to low heat
  • Roll truffles in the chocolate coating one by one (I also ended up spooning the chocolate coating mix over the truffles because there was a lot left over)
  • Place in the freezer for about 10- 15 minutes to allow to set.
  • Store the truffles in the refrigerator and enjoy!
