One of the best ways to eat more vegetables is to eat at least one large, delicious salad every single day.  If you don’t know how to make your own salads at home that are not only nutritious but delicious, try out my simple, no-brainer formula. 

 

Easy Salad Recipe

Greens (choose 2):

>> Kale

>> Romaine lettuce

>> Spinach

>> Arugula

>> Red leaf lettuce

 

Colorful Veggies (choose at least 3):

>> Orange Bell peppers

>> Yellow bell pepper

>> Red bell pepper

>> Shredded carrots

>> Finely chopped celery

>> Finely chopped green onion

>> Spiralized zucchini

 

A little bit of sweetness (choose at least 2):

>> Finely sliced strawberries

>> Goji berries

>> Finely chopped dates

>> Chopped grapes

>> Chopped cherry tomatoes

 

For some crunch (choose at least 2):

>> Chopped walnuts

>> Chopped almonds

>> Pine nuts

>> Chia seed

>> Sesame seed

>> Toasted oatmeal

>> Roasted and salted pumpkin seeds

Then, just mix everything up in a large bowl and dress with whatever dressing you’d like that has the most natural ingredients.  OR you can make your own.  

Here is one of my favorite salad dressing recipes you might like:

Avocado dressing:

  • 1 avocado
  • 4 – 6 tablespoons extra virgin olive oil
  • 4 -6 tablespoons Nutritional yeast
  • A bit of lemon juice
  • dash of pink Himalayan salt to taste

Just blend everything up with a hand blender and coat your salad with it.
