Healthy Granola Recipe

Last weekend I went to Costco with my 2 year old son and boy does that kid love his samples!  He got to try Greek yogurt with Udi’s gluten free granola and he loved it.  I didn’t buy the granola or the yogurt because I prefer to buy organic dairy products as much as possible (the one they carry at Costco isn’t organic).  And the granola, I thought was just a waste of money.  I figured I could just make it myself – and I did!  Here I’ll share with you a super easy healthy granola recipe. 🙂

I can’t believe I waited so long to make this easy healthy homemade granola.  I told my husband I would never ever buy granola again.  Yes, it’s that easy to make.  We don’t eat granola very often but I know that my son enjoys it with milk or yogurt and so does my husband.  It’s also a good combination food to mix with nuts or fruit.  Also, the store bought kind can have so many weird ingredients that sometimes it’s hard to even know what one is really eating.

First, you mix all the ingredients in a bowl.  I used my clean hands to mix 🙂

Then, you lay the mixture on a baking sheet (make sure the layer is thin).

Once it’s done, it will be nice and toasty!

So, I hope you’ll try the recipe if you’re a fan of granola.

 

Here is what I used:

  • 2 cups of old fashioned oats
  • 1.5 cups of dry fruit and seeds – you’ll want to chop up the nuts and fruit either with a food processor or old school with a knife (I used a mix that I get at Costco – see picture)
  • 3 tablespoons grade-b maple syrup (you can also use honey)
  • 2 tablespoons coconut oil (melted)
  • 1/2 tsp vanilla extract
  • 1 large pinch of Himalayan salt (or you can use fine sea salt)

Directions:

  • Preheat oven to 300 degrees fahrenheit.
  • Combine all ingredients in a mixing bowl with your hands and coat well
  • Spread a thin layer of the mixture on a lightly greased baking sheet (I used a bit of coconut oil and spread it with a napkin)
  • Bake for about 10 minutes or until lightly toasted
  • Cool before serving or storing

The granola can be kept in airtight containers in a cool, dry place for up to 2 weeks.  I keep mine in mason jars and put them in the refrigerator.
